Today we're continuing our "Cooking With!" series with Lauren's yummy Power Protein Balls! Chock full of healthy ingredients, these energizing balls are a much smarter option than that chocolate bar you might be craving mid-afternoon. And the good news is these taste just as good! 2 cups old-fashioned rolled oats
1 cup extra-crunchy peanut butter
1/2 cup raw honey
1/2 cup mini chocolate chips
1/2 cup dried cranberries
1/2 cup shredded coconut
2 tablespoons ground flax seed
2 scoops of your choice of protein powder
1. Mix all the ingredients together in a large bowl or blend together in a food processor. Pulse or mix the oats, peanut butter, honey, chocolate chips, cranberries, coconut, flax seeds, and protein powder until fully combined. Mixture should be sticky and not too crumbly. If too dry, add more honey or a splash of water.
2. Line a baking sheet with waxed paper. Form balls from the mixture (about 1 1/2 tablespoons each) and place them on the baking sheet. Refrigerate for 30 minutes before serving, and keep refrigerated until ready to eat! Yum!
